Frequency, Channel, Modulation. Confused!

Started in 1981 with a Formac88. Stopped CB'ing a few years back to the airways being swamped with rubbish, and subsequent licencing.
Have resumed again. Have a Audioline PT340 40 Channel FM "27/81" and a Realistic TRC 2005 to "PR 27 GB". Antenna K40 magmount.
I realise the different standards on different frequencies.
So I am totally confused now as to which set/standard I need to get on air.
That is which channels/frequencies /modulation are people using nowadays.
